Collard Greens

Time: about 4 hours

Ingredients: 
  • 2 medium onions, chopped
  • 2 smoked ham hocks
  • 6 garlic cloves, minced
  • 9 cups water
  • 2 pounds collard greens
  • 2 Tablespoons white vinegar
  • 4 teaspoons sugar
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1/2 teaspoon red pepper flakes

Instructions: 
  • Combine onions, ham hocks, garlic and water in a large soup pot
  • Bring to a boil and simmer (covered) for 2 hours
  • Cut out collard green steams and discard, chop leaves into 1" strips
  • After mixture has simmered for 2 hours, add the collards, vinegar, sugar, salt, pepper and red pepper flakes and mix well
  • Simmer (covered) for another 2 hours
  • Serve warm
