Cornmeal Waffles with Strawberry Syrup

DIETS: VG VT
Serves 4

Ingredients: 

Syrup
  • 1 pound strawberries 
  • 4 Tablespoons sugar
  • 1/4 cup orange juice
  • 1 teaspoon vanilla extract

Waffles
  • 2 cups almond milk
  • 1 teaspoon apple cider vinegar
  • 1 1/2 cups cornmeal
  • 1 cup flour
  • 2 Tablespoons brown sugar
  • 1 1/2 Tablespoons baking powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground cinnamon
  • 2 Tablespoons olive oil
  • Cooking Spray

Instructions: 
  • Make syrup: Cut stems off strawberries and chop into small chunks.  Place in small saucepan with the rest of the syrup ingredients and cook on med-low heat for 20 minutes, stirring often. 
  • Make waffles: Heat waffle iron.  Mix together milk and vinegar and set aside.  In large bowl, whisk dry ingredients well.  Make crater and add the wet ingredients.  Mix well (some lumps are okay).
  • Spray waffle iron with cooking spray and bake waffles.  Cover with syrup and serve hot.
