Plan ahead - slow cooker recipe! DIETS: LC Serves 6
Ingredients:
1 1/2 pounds boneless chicken breasts, thawed
2 cups chicken broth
1 cup creamy Caesar dressing (save the rest of the bottle to drizzle at the end!)
1/2 cup Parmesan cheese, shredded
Salt & Pepper, to taste
6 flour tortillas (8 inch)
2 cups shredded romaine lettuce
1 tomato, chopped
Croutons, as desired
Instructions:
Put chicken and broth in a slow cooker (1 1/2 or 3 quart both work).
Cook on low for 3-4 hours or until internal chicken temp is 165F.
Remove the chicken from the slow cooker and discard liquids.
Shred or chop chicken into bite-sized pieces and return to slow cooker.
Add dressing, Parmesan cheese, salt & pepper.
Heat until warmed through - about 30 minutes.
Serve in tortillas and top with romaine, tomato, croutons and a drizzle more of Caesar dressing (if desired).
