Creamy Jalapeno Popper Corn

Corn is a healthy grain and source of fiber, vitamins, minerals, and antioxidants. It may promote eye and digestive health.

This recipe can be made with cobs or frozen corn.
Serves 4
Time: 30-60 minutes, depending on corn type and cooking method

Ingredients: 
  • 2 jalapenos
  • 4 strips bacon, cooked & crumbled
  • 1/2 cup panko bread crumbs
  • 1 teaspoon oregano
  • 1 teaspoon smoked paprika
  • 4 ounces cream cheese, softened
  • 1/4 cup sour cream
  • 2 Tablespoons fresh lime juice (about 1 large lime)
  • 1 Tablespoon cilantro, chopped
  • 1/2 teaspoon Southwest spice, or to taste
  • 4 cobs of sweet corn, husked (or 3 cups frozen corn)
  • Salt, to taste
  • Olive oil

Instructions: 
  • Seed & chop jalapenos, set aside.
  • Cook and crumble bacon, set aside.
  • Make panko: Heat 2 Tablespoons olive oil over medium heat and add the panko. Cook and stir until it starts to brown. Add the oregano, paprika and sprinkle of salt and continue to cook until crumbs are toasted (a couple more minutes).
  • Make crema: Mix cream cheese, sour cream, lime juice, cilantro, Southwest spice and salt (to taste) in a small bowl.
  • MAKE CORN (IF USING COBS):
    • If grilling: Rub with olive oil and grill over med-high heat for 12-15 min.
    • If baking: Rub with olive oil and bake @ 350F for approximately 30 min.
    • If boiling: Bring a large pot of salted water to a boil. Add corn and return to a boil. Boil for 5 minutes.
    • Assemble: Spread cream cheese mixture over corn cobs. Sprinkle with panko, jalapenos & bacon and serve immediately!
  • MAKE CORN (IF USING FROZEN or OFF THE COB)
    • Heat a large skillet over medium heat and add frozen corn and 1 Tablespoon water.
    • Saute until corn is done and warmed through (about 5 minutes).
    • Add the crema to the skillet and heat until mixture is hot and creamy.
    • Sprinkle with panko, jalapenos & bacon and serve immediately!
