Creamy Kale

DIETS: LC GF KT VG VT

Ingredients: 
  • 5 Tablespoons butter, divided (vegan, if desired)
  • 1/2 yellow onion, minced
  • 8 oz Kale, large ribs removed and chopped
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground cayenne pepper
  • 1/4 cup sour cream (vegan, if desired)
  • Salt & Pepper, to taste

Instructions: 
  • Melt 2 Tablespoons of the butter in a large non-stick skillet over medium heat.
  • Add onion and cook until soft and golden (about 5 min).
  • Add kale, 1/3 cup water, rosemary, oregano, garlic powder & cayenne. Mix well.
  • Cook until kale is wilted and tender, stirring often (about 10 minutes).
  • Remove pan from burner and add in the sour cream, remaining 3 Tablespoons of butter and salt & pepper, to taste.
  • Mix well and keep warm until serving.
