Creamy Veggie Pasta

DIETS: LC VT
Serves 6
Time: 40 Minutes

Ingredients: 
  • 16 oz package of campanelle, rotini or fusilli
  • 1/4 cup butter
  • 4 cloves garlic, minced
  • 6 plum tomatoes, seeded and chopped
  • 2 orange peppers, seeded and chopped
  • 4 green onions, chopped
  • 1 teaspoon herbes de provence
  • 1/4 cup white wine
  • 1 cup heavy whipping cream
  • 2/3 cup grated Parmesan cheese
  • Salt/pepper to taste

Instructions: 
  • Cook pasta according to package directions.  Drain, cover and keep warm.
  • Melt butter in a large skillet and add garlic, tomatoes, peppers, onions, and herbes de provence.
  • Cook over medium heat until veggies are tender (approximately 5 minutes). 
  • Add white wine and simmer an additional 2-3 minutes, until most of the liquid has evaporated. 
  • Stir in cream, salt and pepper and simmer a few more minutes until heated through and the desired consistency. 
  • Stir in Parmesan and mix until melted.  Add the warmed pasta and mix well. 
  • Serve immediately.
