Crispy Fish

Serves 4

Ingredients: 
  • 1 cup finely crushed saltine crackers (about 28-30 crackers)
  • 1 teaspoon seasoned salt
  • 1/2 teaspoon celery salt
  • 1/2 teaspoon garlic salt
  • 3/4 cup flour
  • 2 eggs, whisked
  • 4 fish fillets (tilapia or catfish work especially well)
  • 1/2 cup butter, melted
  • 4 Tablespoons peanut or vegetable oil

Instructions: 
  • In a shallow dish, combine crackers and salts.
  • Put flour in a separate shallow dish.
  • Put eggs in a separate shallow dish.
  • Pat fillets dry, dip in the flour,  then the eggs,  and then coat with crumbs.
  • Add the oil and butter to a large skillet and preheat on medium-high heat. 
  • When hot, add the fillets and fry 4-6 minutes on each side, or until done in the center. 
  • Serve hot!
