1 cup finely crushed saltine crackers (about 28-30 crackers)
1 teaspoon seasoned salt
1/2 teaspoon celery salt
1/2 teaspoon garlic salt
3/4 cup flour
2 eggs, whisked
4 fish fillets (tilapia or catfish work especially well)
1/2 cup butter, melted
4 Tablespoons peanut or vegetable oil
Instructions:
In a shallow dish, combine crackers and salts.
Put flour in a separate shallow dish.
Put eggs in a separate shallow dish.
Pat fillets dry, dip in the flour, then the eggs, and then coat with crumbs.
Add the oil and butter to a large skillet and preheat on medium-high heat.
When hot, add the fillets and fry 4-6 minutes on each side, or until done in the center.
