Mix eggs, mustard, parsley and old bay together in a shallow dish.
Pour 1-2 cups potato flakes in a separate shallow dish.
Pat fish dry and season with salt/pepper, to taste.
Dip fish in the mustard mixture, then dip in the potato flakes to coat.
Fry in hot oil or a deep fryer for 6-8 minutes (3-4 minutes per side if pan frying), or until fish flakes easily with a fork and is golden brown.
