Crockpot French Dips

Servings 4
Time: 10 hours

Ingredients: 
  • 3 lb beef roast
  • 2 Tablespoons olive oil
  • 2 onions, sliced
  • 2 cloves garlic, crushed
  • 2 cups beef broth
  • 1/4 cup soy sauce
  • 2 Tablespoons Worcestershire sauce
  • Salt/Pepper to taste
  • 4 hoagie buns
  • 8 slices provolone cheese

Instructions: 
  • Trim roast and salt and pepper to taste
  • Heat olive oil over med-high heat in large skillet.  Brown the roast on all sides (2-3 min per side)
  • Move roast to crock pot.  
  • Add onions to pan used to brown roast and saute until tender and starting to brown.  Add garlic and saute  for 1 minute.  Move onions/garlic to crockpot.
  • Mix broth, soy sauce and Worcestershire sauce.  Pour over roast and onions in crockpot.
  • Cover and cook on low for 7 hours - but at the 5 hour mark, remove the roast and slice into 1/4" slices.  Return back to crock pot and cook on low for the remaining 2 hours.
  • To serve, split buns and top bottom halves with meat and cheese.  Broil tops and bottoms for 1-3 minutes or until cheese is melted and bun is slightly toasted.  
  • Serve with cooking liquid on the side for dipping.
