Heat olive oil over med-high heat in large skillet. Brown the roast on all sides (2-3 min per side)
Move roast to crock pot.
Add onions to pan used to brown roast and saute until tender and starting to brown. Add garlic and saute for 1 minute. Move onions/garlic to crockpot.
Mix broth, soy sauce and Worcestershire sauce. Pour over roast and onions in crockpot.
Cover and cook on low for 7 hours - but at the 5 hour mark, remove the roast and slice into 1/4" slices. Return back to crock pot and cook on low for the remaining 2 hours.
To serve, split buns and top bottom halves with meat and cheese. Broil tops and bottoms for 1-3 minutes or until cheese is melted and bun is slightly toasted.
Serve with cooking liquid on the side for dipping.
