Combine everything but salmon and cooking spray in a bowl.
Spray bottom of 13 x 9" baking pan with a layer of cooking spray.
Pat salmon dry and place in the pan (skin-side down, if fillets have skin)
Spray salmon with the cooking spray and cover with the crumb mixture (pressing down to adhere).
Spray the tops of the salmon with another layer of cooking spray.
Bake for 15-20 minutes (uncovered), or until fish flakes easily with a fork.
