Crumb-Topped Salmon

Ingredients: 
  • 1.5 cups soft bread crumbs
  • 2 Tablespoons fresh parsley, chopped
  • 1 Tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • 2 garlic cloves, minced
  • 3/4 teaspoon salt
  • 1/2 teaspoon lemon-pepper seasoning
  • 1/4 teaspoon paprika
  • 4 salmon fillets (about 6 oz each)
  • Butter-flavored cooking spray

Instructions: 
  • Preheat oven to 350F.
  • Combine everything but salmon and cooking spray in a bowl.
  • Spray bottom of 13 x 9" baking pan with a layer of cooking spray.
  • Pat salmon dry and place in the pan (skin-side down, if fillets have skin)
  • Spray salmon with the cooking spray and cover with the crumb mixture (pressing down to adhere).
  • Spray the tops of the salmon with another layer of cooking spray.
  • Bake for 15-20 minutes (uncovered), or until fish flakes easily with a fork.
