Dill Vinaigrette Greens

A delicious option that accommodates almost any diet restriction!
Servings: 4
Time: 30 minutes


Ingredients: 
  • 2 Tablespoon fresh lemon juice
  • 1/2 teaspoon honey
  • 1 Tablespoon chopped fresh dill
  • 1 teaspoon shallot, finely chopped
  • 1/4 cup olive oil
  • 5 ounces spring greens, baby spinach, etc
  • Salt/Pepper, to taste

Instructions: 
  • In a salad bowl, mix together lemon juice, honey, dill and shallot.
  • Drizzle in the olive oil slowly, whisking constantly, until emulsified.
  • Toss with the greens just before serving and season with salt/pepper, to taste.
