Ingredients:
2 Tablespoon fresh lemon juice
1/2 teaspoon honey
1 Tablespoon chopped fresh dill
1 teaspoon shallot, finely chopped
1/4 cup olive oil
5 ounces spring greens, baby spinach, etc
Salt/Pepper, to taste
Instructions:
In a salad bowl, mix together lemon juice, honey, dill and shallot.
Drizzle in the olive oil slowly, whisking constantly, until emulsified.
Toss with the greens just before serving and season with salt/pepper, to taste.
