Double Mashed Potatoes

DIETS: LC GF VG VT
Serves 4

Ingredients: 
  • 2 cups Yukon Gold potatoes, cubed
  • 2 cups sweet potatoes, cubed
  • 1/2 cup sour cream
  • Salt & pepper, to taste
Instructions: 
  •  Put potatoes in a large pot of water and add salt until it tastes like broth. Bring to a boil and cook until they are tender - about 15 minutes. 
  • Drain water and return to the pot.  Cook about 1 minute over low heat to evaporate excess water. 
  • Add  sour cream and mash together well.  
  • Season with salt and pepper to taste.
  • Serve hot.
