Edamame Rice Bowl (V)

Serves 4

Ingredients: 
  • ​4 cups brown rice, cooked
  • 4 cups shelled edamame
  • 1/3 cup sliced almonds, toasted (optional)
  • ​Sauce:
    • 1 cup sliced green onions
    • 1/4 cup rice vinegar
    • 2 Tablespoons orange juice
    • 4 teaspoons toasted sesame oil
    • 1 teaspoon tamari or soy sauce

Instructions: 
  • Make the rice, keep warm.
  • Make the sauce by putting all sauce ingredients in a food processor or blender until smooth.  There should be about 2/3 cup of sauce. Transfer to a small saucepan and heat on low until warmed.
  • Warm/cook the edamame.
  • Assemble by spooning equal parts rice and edamame into a bowl and top with  a tablespoon or 2 of sauce.  
  • Sprinkle toasted almonds over the top. 
  • Serve warm.
