Egg & Asparagus Toast

Ingredients: 
  • 1/4 cup butter, softened and divided
  • 1/4 cup finely grated Parmesan cheese
  • 3/4 teaspoon garlic powder
  • 12 asparagus spears, tough ends trimmed, spears halved
  • 1 Tablespoon olive oil
  • 4 thick slices bread
  • 4 eggs
  • Salt & Pepper, to taste
  • red pepper flakes, if desired

Instructions: 
  • Make the seasoned butter by stirring together 3 Tablespoons butter, cheese, garlic powder, and 1/4 teaspoon salt until it forms a paste; set aside.
  • Position an oven rack in the top third of the oven and preheat the broiler to high.  Line a rimmed baking sheet with foil.
  • Arrange the asparagus on the baking sheet, drizzle with the oil, and sprinkle with salt and pepper.  Broil until tender, shaking the pan midway through broiling, 6-8 min total.
  • Spread each bread slice with the parm butter.  Pan fry on griddle or skillet (a few min on each side).  
  • Top each toast with asparagus.
  • Fry eggs as desired in remaining 1 Tablespoon butter.  
  • Set fried egg over the asparagus. Sprinkle with red pepper flakes, salt and pepper.
  • Serve warm
