Egg & Tot Toast

DIETS: LC VT
Servings: 4
Time: 40 minutes

Ingredients: 
  • 8oz frozen tater tots
  • 4  thick slices  bread
  • Butter (enough to spread on bread and fry the eggs)
  • 4 eggs
  • salt & pepper, to taste
  • Salsa or hot sauce

Instructions: 
  • Bake tots as specified on package.
  • Spread each bread slice with butter. Pan fry on griddle or skillet (a few min on each side).
  • Top each toast with smashed tots.
  • Fry eggs as desired. Set fried egg over the tots.
  • Top with salsa or hot sauce, salt and pepper.
  • Serve warm
