Egg Muffins

These freeze great as well! Place on a sheet/plate and put in the freezer until set; then transfer to a large freezer bag (or individual small freezer bags)

Ingredients: 
  • 1/2 pound bacon, cooked & crumbled
  • 14 eggs
  • 1/2 cup whole milk
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 cup fresh spinach, finely chopped
  • 1/2 cup cheddar cheese, shredded

Instructions: 
  • Preheat oven to 350F.
  • Cook bacon, let cool and then crumble.
  • In a large bowl, whisk eggs, milk, onion powder and garlic powder.
  • Fold in spinach and cheese and mix well.
  • Pour equally into a greased 12-cup muffin pan (Or use muffin liners).
  • Bake for 20-25 minutes (or until set in the center).
  • Serve warm or let cool and freeze for later!
