Enchilada Sauce

Time: 20 Minutes

Ingredients: 
  • 2 Tablespoons olive oil
  • 1 onion, diced
  • 3 large green chili peppers (Anaheim or long), seeded and diced
  • 3 teaspoons chili powder
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon marjoram
  • 1 (28oz) can roasted diced tomatoes with juice
  • 1 teaspoon sugar
  • 2 teaspoons salt

Instructions: 
  • In large saucepan, heat olive oil over medium heat.
  • Add onions and peppers and sauté until softened.
  • Add all remaining ingredients and simmer until heated through.
  • Blend to smooth with an immersion blender, or let cool a bit and blend in regular blender until smooth.
