Farfalle with Tomatoes & Olives

DIETS: LC VG VT
Serves 6

Ingredients: 
  • 2 pounds ripe plum tomatoes, chopped
  • 1 cup pitted black or kalamata olives, halved
  • 1/2 cup chopped fresh basil
  • 2 cloves garlic, finely chopped
  • Salt & pepper, to taste
  • 1/2 cup olive oil
  • 1 pound farfalle (or other small-shaped pasta)

Instructions: 
  • Mix tomatoes, olives, basil, garlic and salt/pepper in a large bowl.  
  • Drizzle the olive oil on top and mix gently to combine. 
  • Let sit at room temp while you make the pasta. 
  • Bring a large pot of salted water to a boil. 
  • Add pasta and cook until al dente (according to package instructions). 
  • Drain the pasta, add the tomato mixture and toss gently to combine. 
  • Serve immediately!
