Melt butter in large saucepan over medium-high heat.
Add onion, celery & carrot and saute, stirring occasionally, for 5 minutes.
Add mushrooms and cook until all vegetables are tender and browning, about 5 minutes.
Add the farro and cook for 2 minutes, stirring constantly.
Add water, soy sauce, thyme and salt and bring to a boil.
Reduce heat to medium-low and simmer until tender, about 20-25 minutes.
Remove the thyme sprigs and serve warm.
