Farro

DIETS: VG VT
Servings: 4
Time: 45 minutes

Ingredients: 
  • 1 Tablespoon butter (vegan, if desired)
  • 1 medium white/yellow onion, chopped
  • 2 medium stalks celery, chopped
  • 2 small carrots, chopped
  • 1 cup mushrooms, sliced (any kind)
  • 1 cup farro
  • 3 cups water
  • 2 teaspoons tamari/soy sauce
  • 4 large sprigs fresh thyme
  • 1/2 teaspoon salt

Instructions: 
  • Melt butter in large saucepan over medium-high heat.
  • Add onion, celery & carrot and saute, stirring occasionally, for 5 minutes.
  • Add mushrooms and cook until all vegetables are tender and browning, about 5 minutes.
  • Add the farro and cook for 2 minutes, stirring constantly.
  • Add water, soy sauce, thyme and salt and bring to a boil.
  • Reduce heat to medium-low and simmer until tender, about 20-25 minutes.
  • Remove the thyme sprigs and serve warm.
