Ready in under 30 minutes...satisfying...DELICIOUS! Serves about 6
Ingredients:
6 oz prosciutto, sliced into small strips
1/4 cup butter
2 shallots, finely chopped
1 cup heavy cream
salt and pepper
16 oz fettuccine
1/2 cup freshly grated Parmesan cheese
Instructions:
Bring a large pot of salted water to a boil.
Meanwhile, Melt butter in a large saucepan.
Add shallots to saucepan and cook over med-high heat until soft and golden (a few minutes).
Add the prosciutto and cook until browned (2-4 minutes).
Reduce the heat to low and add the cream, Parmesan cheese and salt and pepper to taste.
While the cream sauce is warming, add the pasta to the pot of boiling water and cook according to package directions (to al dente).
When pasta is done, drain (reserving 1 cup cooking water).
Return pasta to pot and toss with cream sauce. Add some of the cooking water if it seems too dry.
Serve immediately.
