Fettuccine with Prosciutto

Ready in under 30 minutes...satisfying...DELICIOUS!
Serves about 6

Ingredients: 
  • 6 oz prosciutto, sliced into small strips
  • 1/4 cup butter
  • 2 shallots, finely chopped
  • 1 cup heavy cream 
  • salt and pepper
  • 16 oz fettuccine
  • 1/2 cup freshly grated Parmesan cheese 

Instructions:
  • Bring a large pot of salted water to a boil.
  • Meanwhile, Melt butter in a large saucepan.
  • Add shallots to saucepan and cook over med-high heat until soft and golden (a few minutes).
  • Add the prosciutto and cook until browned (2-4 minutes).
  • Reduce the heat to low and add the cream, Parmesan cheese and salt and pepper to taste.
  • While the cream sauce is warming, add the pasta to the pot of boiling water and cook according to package directions (to al dente).
  • When pasta is done, drain (reserving 1 cup cooking water).
  • Return pasta to pot and toss with cream sauce. Add some of the cooking water if it seems too dry.
  • Serve immediately.
