Fish Fillets with Broccoli Stuffing

Serves 4

Ingredients: 
Stuffing:
  • 1 package (6-7 ounces) seasoned stuffing mix (like Chicken flavored Stove-Top)
  • 1/4 cup butter
  • Water
  • 9 ounce package frozen broccoli, thawed (either small florets or try riced broccoli if you need to "hide" it)
Fillets:
  • 1 pound fresh or frozen fish fillets (tilapia, sole or flounder work well). Season as desired, or buy pre-seasoned fillets (Parmesan crusted tilapia works well).
  • 2 Tablespoons butter, melted

Instructions: 
  • Preheat oven to 375F.
  • Lightly grease a 12 x 8" baking pan.  
  • Prepare stuffing according to package directions (using 1/4 cup butter). 
  • Stir broccoli into stuffing and spoon evenly into greased baking pan. 
  • Place fillets over stuffing mix and drizzle with 2 Tablespoons melted butter. 
  • Cover tightly with foil and bake for 30 minutes.  Remove foil and bake another 10 minutes or until fish is done and flakes easily with a fork.
