Fish with Bacon-Nut Butter

Ingredients 
  • 1 cup pan toasted walnuts or pecans, chopped
  • 6 slices bacon
  • 2 lbs fish (trout, tilapia, etc)
  • Salt/Pepper, to taste
  • 8 scallions, chopped
  • 1/2 cup flour
  • 1 stick (8 tablespoons) butter
  • Juice of 1 lemon
  • 12 fresh sage leaves (or 1 teaspoon dried)

Instructions: 
  • Toast the nuts by heating a small skillet to med-high heat.  Add nuts and toast, stirring constantly, until golden brown.
  • Cook bacon in large skillet until crispy.  Reserve grease in the skillet, remove  bacon to drain on paper-toweled lined plate.  When cooled, break into crumbles.
  • Pat fish dry and season with salt/pepper to taste.  Then dredge in flour on both sides.
  • Heat the bacon drippings back to med  heat and add fish and sauté on both sides until done (about 6 min per side).
  • Meanwhile, in small saucepan, melt butter and add lemon juice and sage.  Keep warm on low heat.
  • To serve, top fish with lemon-sage butter, then sprinkle with bacon.
