Fish with Dill Breading

Serves 4

Ingredients: 
  • 4 Skinless, boneless Fish Fillets (about 1 1/4 pounds)
  • 1 egg
  • 2/3 cup bread crumbs
  • 2 Tablespoons snipped fresh dill weed
  • 1 Tablespoon Olive Oil

Instructions: 
  • Rinse fish and pat dry with paper towels.
  • Cut fish into smaller (8) pieces.
  • In a shallow dish beat egg. In another shallow dish combine bread crumbs, dill and 1/2 tsp each salt & pepper.
  • Dip fish pieces into egg, then into bread crumb mixture. Set aside.
  • In large skillet heat olive oil over med-high heat. Add fish. Cook 2-3 minutes on each side or until fish is golden brown and flakes easily with a fork. Drain on paper towels.
