Fried Cabbage

Time: 20 minutes
Half a cup of cooked cabbage has about a third the vitamin C you need for the day. It also gives you doses of fiber, folate, potassium, magnesium, vitamins A and K, and more.

Ingredients: 
  • 2 Tablespoons butter (vegan, if desired)
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes
  • 1/8 teaspoon black pepper
  • 6 cups roughly chopped cabbage
  • 1/4 cup water

Instructions: 
  • Melt butter in a large skillet over medium heat.
  • Add all remaining ingredients and cook until cabbage is tender and water has evaporated (about 10-12 minutes), stirring occasionally.
  • Serve immediately.
