Garlic Shrimp Linguine

Ingredients: 
  • 1/2 lb bacon (approx 7 strips)
  • 6oz dried linguine
  • 1/2 cup white wine
  • 2 Tablespoons butter, divided
  • 4 cloves garlic, finely chopped
  • 1 lb raw jumbo shrimp (peeled, de-veined)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 6 cups baby spinach
  • 1/4 cup grated Parmesan cheese

Instructions: 
  • Fry bacon (break into chunks)
  • Bring large pot of lightly salted water to a boil.  Add linguine and cook until al dente (9-11 minutes); drain and transfer to large bowl.
  • Meanwhile, simmer wine, 1 Tablespoon butter, and garlic in large skillet over medium-low heat until garlic is tender, about 4 minutes.
  • Add shrimp, salt, pepper and simmer, turning shrimp over halfway through, until pink and just cooked through (3-4 minutes).
  • Add spinach and cook until wilted.
  • Mix noodles, shrimp mixture, 1 Tablespoon butter, bacon and parmesan cheese and mix thoroughly.
