These meatballs are packed with flavor! Great on their own or served on rice or mashed potatoes. Or try them served on these great Mashed Bean-Tatoes to keep it slow-carb friendly! DIETS: LC GF KT SC Serves 3 Time: 40 minutes
Ingredients:
2 scallions, chopped (separate whites from greens)
1 thumb ginger, peeled and minced
3 tablespoons mayonnaise
3 tablespoons sour cream, plain unsweetened yogurt or cashew cream
3 tablespoons soy sauce, divided
1 teaspoon siracha
1 pound ground beef
3/4 teaspoon salt
Pepper, to taste
Instructions:
Preheat oven to 425F. Meatballs can be roasted on the top or middle rack of the oven.
In a large bowl, combine mayo, cream/yogurt, 1 tablespoon of the soy sauce and the sriracha. Set aside.
In a second large bowl, combine beef, scallion whites, ginger, remaining soy sauce, salt and pepper.
Form into 1.5-inch meatballs and place on a lightly oiled baking sheet.
Roast for about 15 minutes, or until cooked through.
Add meatballs to bowl with the sauce and toss gently.
Divide between plates and top meatballs with any remaining sauce from the bowl.
Sprinkle with scallion greens for garnish.
Serve!
