Ginger-Scallion Meatballs

These meatballs are packed with flavor!  Great on their own or served on rice or mashed potatoes.  Or try them served on these great Mashed Bean-Tatoes to keep it slow-carb friendly!

​Serves 3
Time: 40 minutes

Ingredients: 
  • 2 scallions, chopped (separate whites from greens)
  • 1 thumb ginger, peeled and minced
  • 3 tablespoons mayonnaise
  • 3 tablespoons sour cream, plain unsweetened yogurt or cashew cream
  • 3 tablespoons soy sauce, divided
  • 1 teaspoon siracha
  • 1 pound ground beef
  • 3/4 teaspoon salt
  • Pepper, to taste

Instructions: 
  • Preheat oven to 425F. Meatballs can be roasted on the top or middle rack of the oven.
  • In a large bowl, combine mayo, cream/yogurt, 1 tablespoon of the soy sauce and the sriracha. Set aside.
  • In a second large bowl, combine beef, scallion whites, ginger, remaining soy sauce, salt and pepper.
  • Form into 1.5-inch meatballs and place on a lightly oiled baking sheet.
  • Roast for about 15 minutes, or until cooked through.
  • Add meatballs to bowl with the sauce and toss gently. 
  • Divide between plates and top meatballs with any remaining sauce from the bowl. 
  • Sprinkle with scallion greens for garnish. 
  • Serve!
