Preheat oven to 425F and place oven rack in top position (can roast at different temps if desired, adjust cooking times up and down accordingly)
Can also do this in an air fryer @ 400F
Combine olive oil, honey and soy sauce in a large bowl and mix well.
Add the carrots and toss to coat. Season with salt & pepper, to taste.
Place on a baking sheet in a single layer
Roast for 25-35 minutes in oven (20-30 minutes in air fryer), stirring half-way through baking time
Sprinkle with parsley, if desired, and serve immediately.
