Glazed Carrots

DIETS: LC GF VG VT
Serves 4
Time: 45 minutes

Ingredients: 
  • 1  1/2 Tablespoons olive oil
  • 1  1/2 Tablespoons honey (or other sweetener)
  • 1  1/2 teaspoons soy sauce
  • 4 cups sliced carrots
  • Salt/Pepper to taste
  • Fresh parsley for garnish, if desired

Instructions: 
  • Preheat oven to 425F and place oven rack in top position (can roast at different temps if desired, adjust cooking times up and down accordingly)
  • Can also do this in an air fryer @ 400F
  • Combine olive oil, honey and soy sauce in a large bowl and mix well.
  • Add the carrots and toss to coat.  Season with salt & pepper, to taste.
  • Place on a baking sheet in a single layer
  • Roast for 25-35 minutes in oven (20-30 minutes in air fryer), stirring half-way through baking time
  • Sprinkle with parsley, if desired, and serve immediately.
