Greek Pizza

Ingredients: 
  • 1 cup warm water
  • 1 (1/4oz) pkg instant yeast
  • 1 Tablespoon honey
  • 1 teaspoon sea salt
  • 1 Tablespoon olive oil
  • 3 cups whole wheat flour
  • 1/2 cup Alfredo sauce
  • 2 cups shredded mozzarella cheese
  • 4 large white button mushrooms, sliced
  • 2 Roma tomatoes, seeded and sliced
  • 1 small onion, chopped
  • 10-15 pitted kalamata olives
  • 1/4 cup frozen spinach, defrosted and drained
  • 1/2 cup crumbled feta cheese with garlic and herbs
  • 1/4 cup parmesan cheese, shredded

Instructions: 
  • Place water in a large bowl. Add oil, instant yeast, salt and honey. Let sit 5min to let yeast bloom and then add 2 1/2 cups flour. Stir to combine. Use remaining 1/2 cup flour to flour board and knead until soft and pliable. Cover with bowl and let rise 30min-1hr, until doubled in size.
  • Heat oven to 425F and prepare the pizza in the meantime.
  • Oil pizza pan and roll out dough. Layer alfredo sauce, herbs, mushrooms, tomatoes, onions, olives, spinach, parmesan and feta.
  • Cook 10-15min on top shelf, and move to bottom rack of oven to brown bottom of crust.
