Guacamole (V, GF)

Serves 6 (as an appetizer)

Ingredients: 
  • 4 ripe avocados, slightly mushy to the touch
  • 1 small onion (red, white or yellow will work)
  • 1 ripe tomato, seeds and pulp removed, chopped
  • 1 serrano or jalapeno pepper, stems and seeds removed, minced
  • 4 cloves garlic, minced
  • 1/4-1/3 cup cilantro leaves, finely chopped
  • 1 lime, juiced
  • A few dashes tabasco and/or worcestershire sauce
  • 1 teaspoon sea salt


Instructions: 
  • Cut the avocados in half.  Remove pits, and scoop out the rest into a bowl.  Using a fork, roughly mash the avocado. 
  • Add other ingredients except tomato, and mash more to desired consistency.
  • Add tomatoes and mix thoroughly.
  • Serve immediately with tortilla chips, vegetables, or whatever you prefer.
  • If not serving immediately, cover entirely with plastic wrap and push wrap down so it's touching entire surface of guacamole (this will prevent browning).
