Ham & Collards Soup

Serves 4
Time: 1 hour, 15 minutes

Ingredients: 
  • ​8 cups veggie, pork or chicken stock
  • 1/2 to 3/4 pound collard greens, stems removed and cut into 1" strips
  • 1 (14 ounce) can whole peeled tomatoes in liquid, tomatoes coarsely chopped
  • 2 celery ribs, chopped
  • 2 medium carrots, chopped
  • 1 medium yellow onion, chopped
  • 1/2 jalapeno pepper, chopped
  • 1 garlic clove, minced
  • 1 teaspoon fresh thyme
  • 1 bay leaf
  • 2 tablespoons white vinegar
  • 2 tablespoons chicken flavored bouillon (Better-than-Bouillon works great)
  • 3 teaspoons light brown sugar
  • 2  1/2 teaspoons accent seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3/4 pound chopped cooked ham

Instructions: 
  • Mix all ingredients except ham in a large soup kettle
  • Bring to a boil, then reduce heat to med-low and simmer for 45 minutes
  • Add ham and cook for an additional 15 minutes
  • Remove the bay leaf and serve hot
