1/2 to 3/4 pound collard greens, stems removed and cut into 1" strips
1 (14 ounce) can whole peeled tomatoes in liquid, tomatoes coarsely chopped
2 celery ribs, chopped
2 medium carrots, chopped
1 medium yellow onion, chopped
1/2 jalapeno pepper, chopped
1 garlic clove, minced
1 teaspoon fresh thyme
1 bay leaf
2 tablespoons white vinegar
2 tablespoons chicken flavored bouillon (Better-than-Bouillon works great)
3 teaspoons light brown sugar
2 1/2 teaspoons accent seasoning
1 teaspoon salt
1/2 teaspoon pepper
3/4 pound chopped cooked ham
Instructions:
Mix all ingredients except ham in a large soup kettle
Bring to a boil, then reduce heat to med-low and simmer for 45 minutes
Add ham and cook for an additional 15 minutes
Remove the bay leaf and serve hot
