Healthy Scrambled Eggs

Serves 1
​From: 21-Day Yoga Body

Ingredients: 
  • 1 Tablespoon olive oil
  • 2 eggs
  • 1 fresh basil leaf, minced
  • 1 fresh sage leaf, minced
  • Pinch fresh rosemary, minced
  • 1/2 cup chopped fresh veggies (red pepper, onion, spinach, asparagus, tomatoes, avocado, etc)
  • 1 clove garlic
  • Salsa, if desired

Instructions: 
  • Heat oil, add onion, garlic, basil, sage, rosemary.  Cook on medium heat until onion is softened (approx 2 min).
  • Add remaining veggies and cook until softened (approx 2 min).
  • Add eggs and scramble.  Cook until eggs are set.
  • Serve immediately.
