This versatile stuffing can be baked as a casserole (no bird needed); or used to fill a turkey /etc as desired. Servings: 8 (more than enough to fill a 12-lb turkey)
8 Tablespoons butter
1 1/2 cups onion, diced
2 cups celery, diced
1 12-15oz package seasoned bread stuffing cubes
1 teaspoon celery salt
3/4 teaspoon dried rosemary
3/4 teaspoon dried sage
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/4 cups hot turkey, chicken or veggie broth (plus 1/2 cup more if baking as a casserole without the bird)
Heat butter over medium heat until fully melted in large skillet.
Add onion and celery and cook (covered) until soft, stirring occasionally (about 15 minutes).
Transfer to a large bowl and add remaining ingredients (use only 1 1/4 cups broth in this step).
If stuffing a bird, use the stuffing immediately to fill cavities and bake according to bird directions.
If not stuffing a bird, spread in a greased 9x13" baking dish. Drizzle with remaining 1/2 cup hot broth.
Cover with aluminum foil and back at 350F for 30 minutes. Remove foil and bake an additional 10-15 minutes or until top is golden.
