Honey Cornmeal Muffins with Maple Butter

Serves 12
Time: 45 minutes




Ingredients - Muffins: 
  • 1 1/4 cups flour
  • 3/4 cup cornmeal
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 Tablespoon grated lemon peel
  • 1/2 cup milk
  • 1/2 cup honey
  • 1/4 cup oil
  • 1 egg, slightly beaten

Ingredients - Butter: 
  • 1 1/2 sticks butter, softened
  • 3 1/2 Tablespoons maple syrup (grade B)

Instructions: 
  • Heat oven to 375F. Line muffin pan with 12 muffin cup liners.
  • Mix dry ingredients well. Add wet ingredients and stir just until dry ingredients are moistened.  
  • Fill muffin cups 2/3 full.
  • Bake at 375F for 13-18 minutes.
  • Meanwhile, make Maple Butter by whipping butter and syrup well.
  • Serve topped with Maple Butter.
