Hot Dog Burritos

Ingredients: 
  • 4 tomatillos, husked, rinsed and chopped
  • 2 large dill pickles, chopped
  • 1 jalapeno, seeded & chopped
  • 1/4 yellow onion, chopped
  • Zest and juice from 1 lime
  • 1/4 cup cilantro, chopped
  • Salt, to taste
  • 1 can (15oz) black beans
  • 1 teaspoon ground cumin
  • 1 1/2 Tablespoons Frank's red hot sauce
  • 4 hot dogs
  • 1 Tablespoon olive oil
  • 4 large flour tortillas
  • 1 cup shredded Mexican cheese blend
  • 1 cup shredded lettuce

Instructions: 
  • Make salsa by combining tomatillos, pickles, jalapeno, onion, lime zest, lime juice, cilantro and salt in a medium bowl, mixing well.
  • Make beans by combining beans, cumin and Frank's red hot sauce in a small saucepan over medium heat until boiling.  Reduce heat to low and keep warm.
  • Make hot dogs by placing them in a large skillet with 1/4" water and olive oil.  Heat over high heat until boiling, then reduce heat to medium and cook until water evaporates.  Continue to cook once the pan is dry for a few minutes, rotating hot dogs, to brown on all sides.  Remove from pan, slice in half lengthwise, and wrap in foil to keep warm.
  • In skillet used for hot dogs, heat over medium heat until empty pan is hot.  Add 1 tortilla and heat until blistered on 1 side.  Flip and top with 1/4 cup cheese.  Cook until cheese starts to melt, then transfer to a plate and top with 1/4 of the beans, 1/4 of the lettuce, 1/4 of the salsa, and 1 hot dog (2 halves).  Tuck in the tortilla ends and roll up into a burrito.  Repeat with remaining 3 tortillas.
