Irish Potatoes (Colcannon) - (GF)

GREAT way to incorporate veggies into a meal!   DELISH!!
Serves 4


Ingredients: 
  • 2 pounds Potatoes, peeled and cut into chunks
  • 1/2 bunch of kale, tough stems removed and chopped into 2-3" pieces
  • 1 small leek, trimmed, halved lengthwise and cut into 1/4" pieces
  • 2 Tablespoons butter
  • 1/2 cup heavy cream
  • salt and pepper to taste
Instructions: 
  •  Put potatoes in a large pot of water and add salt until it tastes like broth. Bring to a boil and cook until they are tender - about 15 minutes. 
  • Add the kale and cook for another minute.
  • Add the leeks and cook for another few minutes (or until all veggies are very tender).
  • Drain the veggies and return to the pot. 
  • Add butter and cream and mash together well.  
  • Season with salt and pepper to taste.
  • Serve hot.
