DIETS: LC GF VT Serves 4 GREAT way to incorporate veggies into a meal! DELISH!!
Ingredients:
2 pounds Potatoes, peeled and cut into chunks
1/2 bunch of kale, tough stems removed and chopped into 2-3" pieces
1 small leek, trimmed, halved lengthwise and cut into 1/4" pieces
2 Tablespoons butter
1/2 cup heavy cream
salt and pepper to taste
Instructions:
Put potatoes in a large pot of water and add salt until it tastes like broth. Bring to a boil and cook until they are tender - about 15 minutes.
Add the kale and cook for another minute.
Add the leeks and cook for another few minutes (or until all veggies are very tender).
Drain the veggies and return to the pot.
Add butter and cream and mash together well.
Season with salt and pepper to taste.
Serve hot.
