Japanese Onion Soup (V, GF)

Serves 6

Ingredients: 
  • 4 cups chicken or vegetable broth (store-bought or  homemade - if using homemade, add a couple of bouillon cubes for extra flavor)
  • 2 cups water
  • 1/2 white onion
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 small cloves garlic, sliced
  • 1/2 teaspoon salt
  • 6 medium mushrooms, sliced
  • 1 stalk green onion, diced
  • French Fried Onions (Regular or Gluten-Free)

Instructions: 
  • Combine chicken broth and water in large saucepan over high heat.
  • Add onion, carrot, celery, garlic and salt and bring to a boil. Reduce heat and simmer 10 minutes.
  • Strain vegetables out of the broth and toss. (let them sit for 24 hours for additional broth taste)
  • To serve, ladle 1 cup of broth into bowl. Drop a few pieces of fried onion into bowl followed by sliced mushrooms and pinches of green onion.
