Keto Biscuits & Gravy

Ingredients: 
  • 1 1/2 cups superfine almond flour
  • 1/4 teaspoon salt
  • 1 Tablespoon baking powder
  • 1 teaspoon xanthan gum
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 2 eggs
  • 1/2 cup sour cream
  • 2 Tablespoons butter, melted
  • 1/2 cup shredded cheddar cheese
  • 2 green onions, chopped
  • 1 pound ground Italian sausage
  • 3 cups heavy cream
  • Hot sauce, if desired

Instructions: 
  • Preheat oven to 400F. Grease a muffin/cupcake pan (will only use 6 spots).
  • In a large bowl combine almond flour, salt, baking powder, xanthan gum, garlic powder and onion powder.
  • In a 2nd bowl, add eggs and sour cream and whisk until combined. Let the butter cool a bit, then add that as well and mix well (if you add the butter while it's too hot, it may curdle the rest of the mixture).
  • Mix wet ingredients into dry ingredients. Add cheese and green onions and mix well.
  • Pour into greased muffin pan (fill each cup to the top). Bake for 15 minutes.
  • While biscuits are baking, make the gravy.
  • In a non-stick skillet, add the sausage and cook until browned, breaking up into small pieces.
  • Add heavy cream and bring to a simmer. Simmer for about 10 minutes, or until thickened.
  • Top biscuits with gravy and drizzle hot sauce over the top, if desired.
