Preheat oven to 400F. Grease a muffin/cupcake pan (will only use 6 spots).
In a large bowl combine almond flour, salt, baking powder, xanthan gum, garlic powder and onion powder.
In a 2nd bowl, add eggs and sour cream and whisk until combined. Let the butter cool a bit, then add that as well and mix well (if you add the butter while it's too hot, it may curdle the rest of the mixture).
Mix wet ingredients into dry ingredients. Add cheese and green onions and mix well.
Pour into greased muffin pan (fill each cup to the top). Bake for 15 minutes.
While biscuits are baking, make the gravy.
In a non-stick skillet, add the sausage and cook until browned, breaking up into small pieces.
Add heavy cream and bring to a simmer. Simmer for about 10 minutes, or until thickened.
Top biscuits with gravy and drizzle hot sauce over the top, if desired.
