Ingredients:
Crust:
1/4 cup sugar
1 1/3 cup flour
1/2 cup butter, softened
Filling:
3/4 cups sugar
2 eggs
1/4 teaspoon baking powder
2 Tablespoons flour
3 Tablespoons fresh squeezed lemon juice
Powdered sugar
Instructions:
Preheat oven to 350F.
Mix together all crust ingredients in medium bowl until mixed well and crumbly.
Add to 8" square pan and press down until firm and even.
Bake for 15-20 minutes or until edges are slightly brown.
Wipe out crust bowl and add all filling ingredients except powdered sugar. Beat at low speed until well mixed, scraping sides occasionally.
Pour filling over hot crust and bake for an additional 15-20 minutes, or until filling is set.
Sprinkle with powdered sugar and cool completely.
