Lemon Bars

DIETS: LC VT
Makes approximately 16 bars
Time: 1 hour, 15 minutes

Ingredients:

Crust:
  • 1/4 cup sugar
  • 1 1/3 cup flour
  • 1/2 cup butter, softened

Filling:
  • 3/4 cups sugar
  • 2 eggs
  • 1/4 teaspoon baking powder
  • 2 Tablespoons flour
  • 3 Tablespoons fresh squeezed lemon juice
  • Powdered sugar


Instructions: 
  • Preheat oven to 350F.
  • Mix together all crust ingredients in medium bowl until mixed well and crumbly.  
  • Add to 8" square pan and press down until firm and even. 
  • Bake for 15-20 minutes or until edges are slightly brown. 
  • Wipe out crust bowl and add all filling ingredients except powdered sugar.  Beat at low speed until well mixed, scraping sides occasionally. 
  • Pour filling over hot crust and bake for an additional 15-20 minutes, or until filling is set. 
  • Sprinkle with powdered sugar and cool completely.
