Loaded Refried Beans

Creamy refried beans meet protein-rich Spam and fresh jalapeño heat in this quick, comforting side dish that delivers bold flavor, satisfying texture, and pantry-friendly ease.

Time: 30 Minutes

Ingredients: 
  • 1 Tablespoon olive oil
  • 1/2 of a yellow onion, chopped
  • 1/2 of a red or green pepper, chopped (optional)
  • 1 jalapeno pepper, minced
  • 16 oz can refried beans 
  • 4 oz Spam, diced (any flavor will work!)

Instructions: 
  • In a medium saucepan, heat oil over medium-high heat. 
  • Add onion and peppers and saute until starting to soften.
  • Add spam and saute until vegetables are tender and spam is warmed through.
  • Add refried beans and stir often until combined and warmed through.
  • Serve immediately.
  • For nicer presentation, remove veggies and spam and keep warm while heating the refried beans.  Then top the refried beans with the mixture right before serving.
