Ingredients:
1 Tablespoon olive oil
1/2 of a yellow onion, chopped
1/2 of a red or green pepper, chopped (optional)
1 jalapeno pepper, minced
16 oz can refried beans
4 oz Spam, diced (any flavor will work!)
Instructions:
In a medium saucepan, heat oil over medium-high heat.
Add onion and peppers and saute until starting to soften.
Add spam and saute until vegetables are tender and spam is warmed through.
Add refried beans and stir often until combined and warmed through.
Serve immediately.
For nicer presentation, remove veggies and spam and keep warm while heating the refried beans. Then top the refried beans with the mixture right before serving.
