Mashed Bean-Tatoes

Creamy white beans whipped with olive oil, garlic, and a touch of butter create a silky, protein-rich alternative to mashed potatoes that feels just as comforting but far more nourishing.
DIETS: GF VG VT SC
Serves 2
Time: 20 minutes

Ingredients 
  • 1 Tablespoon olive oil
  • 1 clove garlic, minced
  • 1 15-oz can white beans (great northern or Cannellini), drained
  • 1/8 teaspoon garlic powder
  • Salt and pepper, to taste 
  • 1 tablespoon butter (vegan, if desired)

Instructions: 
  • Heat Olive oil in a small saucepan over medium heat.
  • Add minced garlic and saute for 30-60 seconds. 
  • Add the beans to the pan and season with garlic powder, salt and pepper.
  • Heat and simmer 5-10 minutes, or until hot.
  • Either mash with a potato masher in the pan, or spoon mixture into a food processor and grind until smooth. 
  • Once bean-tatoes are the desired consistency, mix in the butter and stir/mash/mix until melted. 
  • Serve warm.
  • *Note: If Bean mixture gets too thick you can add water or chicken broth to thin it out.
