Creamy white beans whipped with olive oil, garlic, and a touch of butter create a silky, protein-rich alternative to mashed potatoes that feels just as comforting but far more nourishing. DIETS: GF VG VT SC Serves 2 Time: 20 minutes
Ingredients
1 Tablespoon olive oil
1 clove garlic, minced
1 15-oz can white beans (great northern or Cannellini), drained
1/8 teaspoon garlic powder
Salt and pepper, to taste
1 tablespoon butter (vegan, if desired)
Instructions:
Heat Olive oil in a small saucepan over medium heat.
Add minced garlic and saute for 30-60 seconds.
Add the beans to the pan and season with garlic powder, salt and pepper.
Heat and simmer 5-10 minutes, or until hot.
Either mash with a potato masher in the pan, or spoon mixture into a food processor and grind until smooth.
Once bean-tatoes are the desired consistency, mix in the butter and stir/mash/mix until melted.
Serve warm.
*Note: If Bean mixture gets too thick you can add water or chicken broth to thin it out.
