8 medium russet potatoes, peeled and cut into chunks
6 cloves garlic, peeled
1/2-1 cup whole milk (warmed)
1/4 cup butter, softened
1/2 cup sour cream
3 green onions, chopped
salt/pepper, to taste
Place potatoes and garlic in 2-quart saucepan; add enough water to just cover potatoes.
Heat to boiling, reduce heat. Cover and simmer 20-30 minutes or until potatoes are tender; drain.
Return to pan and keep on low heat (to dry potatoes and make them fluffier).
Mash potatoes in the pan over low heat until no lumps remain.
Add 1/2 cup milk, butter, sour cream, green onion, salt and pepper.
Mash vigorously until potatoes are light and fluffy (add remaining 1/2 cup milk if they seem to dry).
