Mashed Potatoes

DIETS: GF VT
Serves 6
Time: 40 Minutes


Ingredients: 
  • 8 medium russet potatoes, peeled and diced
  • 6 cloves garlic, peeled
  • 1/2-1 cup whole milk (warmed)
  • 1/4 cup butter, softened
  • 1/2 cup sour cream
  • 3 green onions, chopped
  • salt/pepper, to taste

Instructions: 
  • Place potatoes and garlic in 2-quart saucepan; add enough water to just cover potatoes. 
  • Heat to boiling, reduce heat.  Cover and simmer 20-30 minutes or until potatoes are tender; drain. 
  • Return to pan and keep on low heat (to dry potatoes and make them fluffier).
  • Mash potatoes in the pan over low heat until no lumps remain. 
  • Add 1/2 cup milk, butter, sour cream, green onion, salt and pepper.  
  • Mash vigorously until potatoes are light and fluffy (add remaining 1/2 cup milk if they seem to dry).
