Mashed Sweet Potatoes

DIETS: LC GF VG VT
Serves 4

Ingredients: 
  • 4 sweet potatoes/yams, peeled and cut into 1/2"-1" cubes
  • 1/4 cup sour cream (vegan, if desired)
  • 2 Tablespoons butter (vegan, if desired)
  • Salt & pepper, to taste

Instructions: 
  •  Put potatoes in a large pot of water and add salt until it tastes like broth. Bring to a boil and cook until they are tender - about 15-20 minutes. 
  • Drain water and return to the pot.  Cook about 1 minute over low heat to evaporate excess water. 
  • Add  sour cream and butter and mash with potato-masher or whip with hand mixer.
  • Season with salt and pepper to taste.
  • Serve hot.
