Meat-Lover's Chili

Time: 1 hour

Ingredients: 
  • 2 Tablespoons olive oil
  • 1 onion, chopped
  • 2 large garlic cloves, chopped
  • 1 large jalapeno, chopped
  • 4 ounces pepperoni, chopped
  • 1 pound ground beef
  • Salt & pepper, to taste
  • 2 Tablespoons chili powder
  • 3 teaspoons dried oregano
  • 2 teaspoons smoked paprika
  • 2 teaspoons ground cumin
  • 1 pound ground Italian sausage
  • 2 cups beef broth
  • 2 cups tomato sauce
  • 1 - 15 ounce can dark red kidney beans (with their liquid)
  • Cheese & sour cream for garnish and bread or crackers for dipping, if desired

Instructions: 
  • Heat oil in a large soup kettle over med-high heat.
  • Add onions, garlic and jalapeno and stir until softened (3-5 minutes).
  • Add the pepperoni and saute for 1-2 minutes
  • Add the beef, salt, pepper, chili powder, oregano, paprika and cumin and stir to combine.
  • Add the sausage and stir to combine and cook until beef and sausage are browned.
  • Add the stock, tomato sauce & beans and bring to a boil. 
  • Reduce heat to medium and let simmer for 30-45 minutes, stirring often.
  • Top with garnishes of choice and serve bread or crackers for dipping on the side (if desired).
