Ingredients:
9 cups torn romaine lettuce
1 large cucumber, sliced into half moons
1/2 cup crumbled feta cheese (optional)
1 cup cherry tomatoes, quartered
3 scallions, sliced
1/2 cup roasted red peppers, sliced
1/2 cup pitted kalamata olives, halved
2/3 cup olive oil
1/4 cup red wine vinegar
3 cloves garlic, minced
1 teaspoon Italian seasoning
Salt/Pepper, to taste
Instructions:
In a large bowl combine lettuce, cucumber, feta, tomatoes, scallions, red peppers and olives. Mix well.
In a jar with tight-fitting lid, mix olive oil, vinegar, garlic and Italian seasoning. Shake Well.
Drizzle dressing over salad and toss to coat.
Add salt/pepper to taste.
