Ingredients:
1 cup cooked and cooled corn
2 cups romaine lettuce, chopped
2 cups butter lettuce, chopped
1 cup red cabbage, chopped
1 tomato, diced
2 ripe avocado's, pitted, peeled and diced
1 cucumber, diced
1/3 cup red onion, finely diced
1/4 cup fresh lime juice
1 1/2 Tablespoons honey
1 teaspoon chili powder
1/4 cup olive oil
Salt/pepper, to taste
1/2 cup pepitas
1/3 cup fresh cilantro, chopped
Instructions:
In a large bowl, combine corn, lettuces, cabbage, tomato, avocado, cucumber and onion and mix well.
Make the dressing by whisking the lime juice, honey and chili powder. Add the olive oil very slowly, whisking constantly, until an emulsified dressing forms.
Drizzle the dressing over the salad and mix well.
Add salt/pepper to taste.
Garnish with pepitas and cilantro and serve!
