Mexican Chopped Salad

DIETS: LC GF VG VT
Servings: 4 as a main dish (8 as a side)
Time: 30 Minutes

Ingredients: 
  • 1 cup cooked and cooled corn
  • 2 cups romaine lettuce, chopped
  • 2 cups butter lettuce, chopped
  • 1 cup red cabbage, chopped
  • 1 tomato, diced
  • 2 ripe avocado's, pitted, peeled and diced
  • 1 cucumber, diced
  • 1/3 cup red onion, finely diced
  • 1/4 cup fresh lime juice
  • 1 1/2 Tablespoons honey
  • 1 teaspoon chili powder
  • 1/4 cup olive oil
  • Salt/pepper, to taste
  • 1/2 cup pepitas
  • 1/3 cup fresh cilantro, chopped

Instructions: 
  • In a large bowl, combine corn, lettuces, cabbage, tomato, avocado, cucumber and onion and mix well.
  • Make the dressing by whisking the lime juice, honey and chili powder.  Add the olive oil very slowly, whisking constantly, until an emulsified dressing forms.
  • Drizzle the dressing over the salad and mix well.
  • Add salt/pepper to taste.
  • Garnish with pepitas and cilantro and serve!
