Add the chiles, cheese, red pepper, green onion and black olives and mix until combined.
Spread about 1/3-1/2 cup of mixture on each tortilla and roll up tightly.
Cover each tortilla rollup with plastic wrap and chill for 1-4 hours.
When ready to serve, cut each roll-up into 8 slices.
