Mexican Pinwheels

DIETS: LC KT VT
Servings: 40 roll-ups
Time: 30 minutes, plus 1-4 hours chill time
*Don't let chill overnight - they get gummy


Ingredients: 
  • 8 oz cream cheese, softened
  • 8 oz sour cream
  • 1 1/2 Tablespoons Taco seasoning (or 2 teaspoons garlic powder & 2 teaspoons season salt)
  • 1 4-oz can diced green chiles, drained
  • 1 cup finely shredded cheddar cheese
  • 1/2 cup red pepper, finely chopped
  • 1/2 cup green onions, finely chopped
  • 1/4 cup black olives, finely chopped
  • 4-5 8" flour tortillas (Low-carb for Keto diets)

Instructions: 
  • Beat together cream cheese, sour cream and seasonings.
  • Add the chiles, cheese, red pepper, green onion and black olives and mix until combined.
  • Spread about 1/3-1/2 cup of mixture on each tortilla and roll up tightly. 
  • Cover each tortilla rollup with plastic wrap and chill for 1-4 hours.
  • When ready to serve, cut each roll-up into 8 slices.
