Miso Slaw

DIETS: LC GF VG VT

Ingredients: 
  • 1 1/2 Tablespoons miso
  • 3/4 teaspoon Dijon mustard
  • 3 Tablespoons rice vinegar
  • 1 1/2 Tablespoons fresh lemon juice
  • 3/4 teaspoon pure maple syrup
  • 1 small shallot, minced
  • 1 1/2 Tablespoons olive oil
  • 1 1/2 Tablespoons sesame oil
  • 4 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1 carrot, shredded
  • 1/2 cup scallions, chopped
  • 1/3 cup cilantro, chopped
  • 1 cup sliced almonds

Instructions: 
  • Whisk together miso, mustard, vinegar, lemon juice, syrup, shallot, olive oil and sesame oil and well combined and set aside.
  • In a large bowl, mix cabbages, carrot, scallions, cilantro and almonds. 
  • Pour the dressing over the cabbage mixture and toss until combined.
