Molasses Beans

DIETS: LC GF
Serves 4 (as a side)

Ingredients: 
  • 1 Tablespoon Olive Oil
  • 1 medium yellow onion, finely chopped
  • 1/4 cup cooked ham, finely minced
  • 1 (15oz) can dark red kidney beans, drained
  • 1/2 cup beef broth
  • 1 Tablespoon molasses
  • 1 teaspoon Dijon mustard
  • Salt & pepper to taste

Instructions: 
  • Heat oil in large skillet over med-high heat.  
  • Add onion and cook until tender (about 6-7 minutes). 
  • Add ham and cook a couple more minutes, stirring often.
  • Add all remaining ingredients and bring to a boil.  
  • Reduce heat to med-low and simmer uncovered 20-30 minutes or until sauce has evaporated and thickened to your liking.  
  • Serve immediately.
